St. Vincent Monthly Meal

Feed the Hungry
Casserole pans are available in the Narthex to provide a meal for our neighbors at the St. Vincent shelters.  Instructions are with each pan.  Deliver frozen meals either to the Witzman Center or drop off in the parish office.

Simple Sausage Casserole Recipe

  2  packages (14-16 oz) of Smoked, Polish, or Kielbasa Sausage, sliced into 1/4 '' rounds (approx.)
10  medium potatoes, peeled and cubed
  2  cans of green beans, including juice
  1  tsp salt
  1/2 tsp pepper

In a large pot, place all ingredients.  Cover with a lid.  Heat over medium heat until potatoes are done.  (Roughly 30 minutes, depending on the size of cubes.)  Pour into "1/2 size" steam table pan (which you can pick up at the Rectory or Ascension church), and cover with foil. Write Casserole, Fix, and the date it is to be served on top!

Cathy's version with ingredients from Sam's Club:
 
3 lb package of Hillshire Farms Kielbasa, sliced
#10 size can green beans (large, restaurant size)
10 large potatoes, peeled and diced (approx. 5 lbs.)
salt & pepper
 
In a large pot, put the potatoes on the bottom, layer kielbasa next, then pour green beans over top.  By the time the liquid begins to boil to the top, the potatoes should be done.  Put in the pans, cover with foil, and write casserole and fix on top.
